Recipe of my favorite eggplant Tarte !
Dough:
300g or 9 oz. of flour
1 egg yolk
2 cups of olive oil
a splash of milk
Mix all together to form a ball, spread the dough and place it in the tart pan.
Filling:
1 big eggplant
1 onion
rosemary
1.5 cup of heavy cream
3 eggs
1 cup of shredded gruyère cheese
1/4 cup of aged goat cheese cut in pieces
On the stove, in a pen, cook the eggplant and onion cut in small pieces in olive oil with rosemary, flower of salt (fleur de sel de Guérande) and pepper.
Spread the veggies in the tart pen.
In a bowl, mix together the eggs, the cream, and the cheeses with salt and pepper. Pour it in the tart pen.
Oven 400°F for about 30 minutes!
